Harz Witches' Pot

Food and drink – not just for dancing on Blocksberg – the Harz Witches’ Pot (Hexentopf).

The food in the Harz region, which is typically German, often includes a lot of meat; if necessary, we recommend using smoked salt and a vegan bacon substitute, as well as a vegetarian lard substitute (e.g.apple and onion lard)  to achieve a similarly savory flavor without any animal products.

Preparation

Cut the meat into small pieces and brown it in a pot with hot lard; add the chopped onions and garlic and sauté until golden brown.
Add the cleaned and finely chopped vegetables, the diced raw potatoes, and the spices; sauté briefly, then deglaze with red wine or grape juice and pour in the broth.

Let it simmer for about 20-30 minutes, then season with salt and pepper to taste.

Sprinkle with chopped parsley just before serving.

Tip: Feel free to make a little extra; like many stews and soups, the Harz Witches' Pot can be prepared a day in advance and reheated if needed. It's also easy to freeze, and you can defrost and reheat it for an impromptu get-together.

Ingredients (for 4 servings)

500 g lean beef (or suitable substitute)

60 g (pork) lard

2 onions

200 ml red wine or red grape juice

300 g pointed or white cabbage

200 g celery

200 g carrots

1 leek

About 250 g potatoes

1 liter vegetable or meat broth

2 bay leaves

5 juniper berries

2 cloves of garlic

Salt, pepper, chopped parsley
